Swizzle Sticks

Have you experienced sweet diamonds in your coffee or on your tongue? Swizzle Sticks are a fashion statement....a connoisseur’s style to sweeten and garnish coffee, latte, espresso, cappuccino tea, or any refreshing drink!

Ingredients:
4 cups of Sugar
2 cups of Water
Food coloring, optional
Flavor extracts, optional

Equipment:
Saucepan
Wooden spoon
Waxed Paper
Wide mouthed canning funnel
canning jar
A chopstick (pencil, Popsicle stick) to support the string & stick.bamboo skewers or long wooden party toothpicks (Crystals form best on a rough surface, so in order to ensure they grow on the sticks, prepare as follows - Soak the stick in water. Roll the soaked stick in granulated sugar (Let it dry.)

Ready to start:
Pour the water into a pan and bring it to boil. Add food coloring and flavor extracts, if desired. With the water still boiling, pour about 4 tablespoons of sugar into the boiling water, stirring until it dissolves.Keep adding sugar, a few tablespoons at a time, stirring well after each addition until the solution can't hold any more. You'll know you've added enough when the sugar will no longer dissolve.Let the pan cool for 15 minutes.Place the canning funnel on the jar.Pour the solution through the funnel into the jar from the saucepan. Make sure no undissolved sugar gets poured into the jar. Stop about an inch from the top. Remove the funnel.Tie the prepared stick with a string to the chopstick (used as support above the jar). Be sure the stick hangs down in the middle of the jar.Allow the jar to cool in a safe place where it won't be disturbed. It will take about 7 days for the crystals to be finished forming, but you should see them begin to take shape in less than half that time. If the weather is extremely humid, it may take a bit longer
