Feta and Parsley Cigars

(Makes 32 Cigars )
400 g Feta Cheese
2 Large eggs, beaten
½ Cup finely chopped mint, parsley and dill
Milled black pepper
16 sheets of phyllo pastry
6 tbs melted butter

Preheat oven to 180º C
Blend the feta with mixed herbs and eggs with a twist of pepper
Work with 2 sheets of phyllo at a time (keeping the remaining sheets under a slightly damp teatowel.)
Place one sheet of phyllo on work surface, brush with melted butter.Place a second sheet of phyllo on the first sheet and cut widthwise into 4 evenly sized rectangles.
Spread 1 tbs of the Feta mixure along the short end of one of the phyllo rectangles, leaving 1,5 cm on each side, tucking in the ends one third of the way up to enclose the filling, then continue to roll up the Phyllo with the sides open. Transfer the Cigar, seam side down, to a large baking sheet and brush with more melted butter. Repeat with the remaining Phyllo and Feta.
Bake the Cigars for about 30 min or until golden brown and crispy.Serve hot or at room temperature
