Cherry Chocolate Triangles

180g soft butter or margarine
200ml (150g) light brown sugar
1 extra large egg
500ml (280g) cake flour
125g chocolate chips
125ml (75g) glace cherries, chopped

Cream butter and sugar. Add egg and beat until light and fluffy. Sift flour and add with chocolate chips and cherries. Press into a greased 16cm x 26cm lamington tin. Bake in a preheated oven at 180C for 30 - 35 min. Cool in pan before cutting into triangles. Dust with sifted icing sugar if desired. (Makes about 18)
